Dough balls with garlic butter!

Hi all, sorry for the long absence from posting a recipe. Had a lot going on – moved back to Sheffield, started a new job, and been very busy with everything else in general. But I’m settled in, and back ready to give you guys more tasty recipes. Super easy one this time – classic dough balls with a very simple but tasty garlic butter. This is perfect to make, if you are making pizza, but have excess dough that you don’t want to freeze. I made these using about 1/3 of the 500g of dough that the pizza recipe calls for.

The recipe for the dough balls is below – enjoy!

Ingredients (serves 2 as a starter):

  1. 150g of pizza/foccacia dough, proven (find the recipe here)

  2. Extra strong white bread flour

  3. 75g butter (salted/unsalted)

  4. 1 small handful parsely, finely chopped

  5. 2 cloves garlic, minced

  6. Zest from 1/4 lemon

  7. Olive oil

  8. Salt and pepper

Method:

  1. Pre-heat your oven to 250C, and (if you have one) place your pizza stone inside to heat up

  2. Separate the dough into 8-12 pieces. Shape them into golf ball-sized spheres. The easiest way to do this is to roll them around on a heavily floured surface, and then where there are any lines/cracks in the dough, begin to tuck these into the bottom of the ball. Work your way round each ball, continuing to tuck, until you have a smooth sphere. Once you have this, roll it in the extra bread flour, set aside, and do this with the other lumps of dough.

  3. Once all the dough is rolled into small golf-ball sized balls, place them (tucked side down) on your hot pizza stone in the oven (if you have it). Make sure they have space between them for them to expand, and place them in the oven. If you don’t have a pizza stone, lightly flour a baking tray, spread the balls out evenly on the tray, and put into the oven.

  4. Cook for 5-8 minutes, until the balls are a dark golden brown on the outside. They may want turning occasionally, so as to ensure even cooking all around the ball.

  5. While they are cooking, bring a small frying pan up to a medium heat. Add a touch of olive oil into it, and fry the minced garlic. Fry until it just starts to go brown, and immediately remove. Do not let it go fully brown/burn, as it will become bitter. Add the fried garlic and oil into the butter. Add in the parsley, lemon zest, and season to taste (if using salted butter, avoid adding salt). Mix thoroughly to combine and set aside

  6. When the dough balls are a dark golden brown all over, remove from the oven, and serve with the garlic butter.

Hope you enjoy this one. These will cost next to nothing, and are so much better to make fresh than paying £3-4 for ones out of a packet.
